Dill Curry Roasted Cauliflower

Ingredients
  

  • ½ – ¾ head of cauliflower
  • 1 red bell pepper chopped
  • 2 medium tomatoes chopped
  • 1 onion finely chopped
  • 2 cloves garlic pressed
  • 1 tbsp curry powder
  • Freshly ground black pepper
  • 1 tbsp coconut oil
  • 1-2 tbsp fresh dill chopped
  • Olive oil for drizzling

Method
 

  1. Make nice looking florets, cut the cauliflower stems then use your fingers to break them into pieces.
  2. Break the cauliflower into bite-size pieces.
  3. Put the cauliflower, onion, garlic, bell pepper, tomato, curry powder, black pepper, and coconut oil into a mixing bowl.
  4. Mix all the ingredients well and transfer to a baking sheet.
  5. Bake at 350°F for about 20 minutes or until the vegetables are tender and lightly browned.
  6. Remove from the oven, drizzle with olive oil, and toss with the fresh dill.
